FESICH Cooperative brings together hundreds of coffee-growing families spread across the rugged highlands of Chiapas, where coffee production has been woven into daily life for generations. Farms are typically small, family-managed plots tucked into steep mountainsides, near the El Triunfo Biosphere Reserve, harvested by hand from January through April.
Roasted dark, this Fair Trade Organic lot — a washed blend of Bourbon, Typica, and Mundo Novo grown at 1200-1750 meters — brings intense clove up front, folding into cocoa and mellow cooked grape, with a tart acidity and a mild, candy-like sweetness underneath.
